Nobody has to do without our sushi.
The Mercat de l’Olivar in Palma is no longer a hidden gem but still a must-visit destination. Built in 1951, Palma's largest market hall is divided into two sections: one featuring fruit, vegetables, butchers, and cheesemongers, and the other dedicated to fish vendors and gastronomy. The fish hall, with its variety of bars and mini-restaurants, is a favorite spot for both locals and visitors to enjoy fresh seafood and white wine.
One highlight is Purozushi, previously known as JoSushi. Thomas Wilden and his partner Lenka run the stand, preparing fresh sushi for on-site dining or takeaway. Occasionally, they are joined by a third team member on busy Saturdays. They take great pride in their loyal clientele, with around 80% of their customers being German.
Once a Michelin-starred chef, Wilden chose to leave the high-pressure fine dining world 13 years ago to focus on his stand at Mercat de l’Olivar. His specialty is smoked salmon, and he was the first sushi vendor in the fish hall. Wilden has since expanded with two additional stands, now offering seating for Purozushi guests. Saturdays are particularly bustling at their stand, as well as throughout the market.
